Chicken Biryani


Ingredients:

  • 2 Cup uncooked basmati rice

  • 1 pound( 1/2 Kg) Chicken (with or without bone)

  • Chicken Broth (optional)

  • 2 Cups onion finely chopped

  • 2-3 tbsp - ginger garlic paste

  • 1 tbsp cumin powder

  • 2 tbsp coriander powder

  • 1 tbsp Biryani masala powder

  • 1 cup coriander and mint finely chopped

  • 4-5 green chilies cut into slits

  • 1 cup yogurt/Curd

  • 1/2 cup fried onion

  • 1 tbsp Red chili powder

  • 1/2 tsp turmeric powder

  • 2-3 cloves

  • 2-3 black pepper

  • 2-3 cardamom cloves

  • 1 cinnamon stick

  • 2 bay leaves

  • 1 tbsp cumin

  • 2 -3 tbsp ghee/oil

  • Lime Juice

  • salt to taste

Directions:

1. Wash chicken thoroughly with cold water.In Large bowl add chicken, curd, ginger garlic paste,red chili powder,turmeric,biryani masala powder, lime juice,green chillies, finely chopped coriander/mind leaves,salt,cumin and coriander powder. mix well and marinate for 3-4 hours (or 30 minutes )

2. In the mean time, soak rice in water for 30 minutes,

3. In Large pan, take 5-6 cups of water. let it come to boil , then add rice, one tbsp oil, cumin seeds, salt,bay leaves, cardamom,cinnamon,black pepper, cloves . cook rice until 3/4 done.then drain the water. set it aside to cool down.

4. On the other side, heat another pan .add ghee/oil , then add onion ,bay leave, black pepper. cloves, cardamom, once onion start becoming translucent, add marinated chicken and cook for 5-10 mins or until chicken 3/4 done.

5.Finally, layer rice and chicken one after another. coat the flat pan with little oil, now add cooked chicken and then rice.prepare first layer, sprinkle little garam masala powder, chopped coriander ,mint leaves and fried onions.

6. Follow step 5 again.

7 On the low flame cook the biryani for about 20 minutes.
